Tuesday ~ Blackened Mahi Mahi Sandwich
I am a really big sandwich fan — I would fill up and entire week’s mealplan with nothing but sandwiches if I thought you loved them as much as I did. Don’t worry, I will refrain myself by only sharing my favorite. Blackened Mahi Mahi is a wonderful fish sandwich that is great for you has a mild fish taste. It is the perfect starter fish for anyone who is trying to introduce more fish into their diet.
Wednesday ~ Hot Kentucky Brown
Okay, so I lied a little. Hot Kentucky Brown is, technically, a sandwich BUT since it is an open-faced sandwich, I think I can get away with it… maybe.
Thursday ~ Taco Salad
Do you have leftovers from Monday night’s Taco Pie? Combine them with Pam’s Thursday night Taco Salad for a wonderful end of your week! Fill your tummy with taco goodness, and get ready for Friday!

Sunday Morning ~ Sausage Frittata with Sriracha Blackberry Sauce
I will never forget the look on my teen son’s face when he took his first bite of my Sausage Frittata with Sriracha Blackberry Sauce – his eyes lit up and he spoke with a bite in his mouth, mumbling “that’s amazing!” I agree, it is pretty amazing, and I hope your family agrees too.
Sunday Dinner ~ Easy Savory Beef Stew
