This healthy and colorful grilled Corn and Cherry Tomato Salad pairs well with grilled meats and poultry, but you can serve it with just about any main course you prefer.  Or you can eat it as a main course.  I know my son does, he loves everything in it, and you can add a little hot sauce to it, and he’ll eat even more!

Where did the Wedge Salad come from?

The history of the wedge salad is quite fascinating! While it feels like a timeless classic, especially at steakhouses, its exact origin is a little “murky” in food history. Many believe the first printed recipe for a wedge salad with blue cheese dressing appeared in a 1916 cookbook by Marion Harris Neil. However, it was truly in the 1920s and, more famously, the 1970s that it became a steakhouse staple, loved for its refreshing crunch that perfectly balanced a rich, juicy steak. So, the next time you enjoy a wedge, you’re savoring a piece of delicious American culinary history!

You will need the following items to make this recipe:

Ingredients:

Wedge Salad

  • ½ head iceberg lettuce
  • ½ cup Thousand Island dressing
  • 10-15 cherry tomatoes, halved
  • ¼ cup bacon pieces

Directions:

  1. Start by trimming the bottom core off your head of lettuce. You’ll only need one half for this recipe, so go ahead and cut it in half, then keep slicing it in half until you have nice, bite-sized pieces.  Wedge Salad Wedge Salad
  2. Now, arrange those lovely lettuce sections on a platter. Wedge Salad
  3. Drizzle your favorite dressing (we used a thousand island) over the top. Wedge Salad
  4. Cut the tomoatoes in half and then sprinkle them and some crispy bacon on top for that extra flavor.  Wedge SaladWedge Salad

Ingredients

  • ½ head iceberg lettuce
  • ½ cup thousand island dressing
  • 10-15 cherry tomatoes, halved
  • ¼ cup bacon pieces

Instructions

  1. Cut the bottom core off the head of lettuce, (you will use one half for this recipe)  then cut in half. Cut the half in half, then half again.
  2. Arrange on a platter.
  3. Drizzle dressing over the lettuce, then sprinkle tomatoes and bacon.
  4. Serve and enjoy!
