It’s perfect with Chicken or Steak on it so you can have salad for dinner!

Strawberry Mint Feta Salad Ingredients:
White Balsamic Vinaigrette Ingredients:
- 1/2 cup white balsamic vinegar
- 1/2 cup extra virgin olive oil – light flavor
- 2 tablespoons of honey
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 garlic cloves
- 1 shallot
Strawberry Mint Feta Salad Ingredients:
- 5 ounces spring mix (one container)
- 4-5 sage leaves, julienned
- 5-6 mint leaves, julienned
- fresh strawberries, sliced (8-10 strawberries)
- 1 medium red onion (1 cup thinly sliced)
- 5 ounces crumbled feta cheese
- 1 cup of chopped walnuts
Strawberry Mint Feta Salad Directions:
White Balsamic Vinaigrette Steps
Make the vinaigrette by adding the vinaigrette ingredients into a blender.
Mix for 30-45 seconds until fully emulsified.
Notes: For the vinaigrette, you can also use red wine vinegar or rose balsamic vinegar.
The dressing stores well for 1 week in a mason jar with the lid tightly on it.
Makes a little over 1 cup of dressing.
Salad Steps:
Slice your herbs, strawberries and onions.
Assemble the salad by adding the salad ingredients into a large bowl.
Pour the vinaigrette over the salad.
