Calling all summer produce enthusiasts! We’re taking the classic Caprese salad and giving it a vibrant, seasonal twist with this Peach and Blueberry Caprese Salad recipe. This light and refreshing dish is bursting with juicy peaches, sweet blueberries, and creamy mozzarella – a perfect way to celebrate the flavors of summer on a plate.

We're taking the classic Caprese salad and giving it a vibrant, seasonal twist with this Peach and Blueberry Caprese Salad recipe. This light and refreshing dish is bursting with juicy peaches, sweet blueberries, and creamy mozzarella – a perfect way to celebrate the flavors of summer on a plate.

Ingredients

  • 2 cups arugula
  • 1 peach
  • ¼ cup blueberries
  • 2 oz fresh mozzarella
  • 2 - 3 slices Prosciutto
  • ½ Tbsp olive oil
  • ½ Tbsp Honey
  • 1 tsp lemon juice
  • Balsamic Glaze to drizzle on top

Instructions

  1. In a small bowl, whisk together the olive oil, honey and lemon juice.
  2. Thinly slice the peach. Add the peaches and the blueberries to the bowl with the dressing and toss to coat. 
  3. Remove the fruit from the dressing and place on top of the arugula. Add on the prosciutto and crumble the fresh mozzarella. Drizzle the balsamic glaze on top and enjoy!
