No-Bake Mini Turtle Cheesecakes: Bite-Sized Bliss

These bite-sized wonders are the perfect answer to your holiday dessert dilemma! These mini turtle cheesecakes are a creamy, dreamy delight topped with a luscious caramel drizzle, rich chocolate, and crunchy pecans. It’s like Turtle candy but in cheesecake form! No baking is required, just a few simple steps to gourmet goodness.

That’s right, I’ve got a recipe for S’mores Sundae mini cheesecakes that will have your taste buds singing. These little cheesecakes are sure to be a hit with both kids and adults alike. So grab those ingredients and let’s get started!

If you love cheesecake, I promise you will fall in love with this easy Mini Cheesecake Cups recipe! This recipe is so simple, has few ingredients, and takes minimal effort to make. Seriously, it couldn’t be easier! But, don’t let easy fool you! It may be an easy recipe, but it has a taste that will drive your taste buds wild! 

If you are looking for a super simple yet elegant dessert, then look no further than this delicious No-Bake Cherry Cheesecake! It is made with simple ingredients and is super easy to put together. It is totally up to you whether to make in a pie plate or these fun mason jars but there is something special about individually served desserts!

Notes

  • We used a regular muffin-sized pan. You could also use a mini-muffin pan or jumbo muffin size as well.
  • We used homemade caramel sauce – but storebought works as well.
  • To melt the chocolate – place the chocolate chips in a small, microwave-safe bowl. Heat for 15 seconds at a time and stirring well in between each interval. Do not overheat – it will scorch the chocolate!

Ingredients:

  • 2 sleeves graham crackers
  • ½ c. unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ c sugar
  • 2 t vanilla
  • 1 c heavy whipping cream
  • 4 oz prepared caramel sauce
  • ½ c melted chocolate (semi-sweet or dark chocolate)
  • ½ c chopped pecan pieces

Directions:

  1. Prepare your muffin pan by lining with cupcake liners for easy removal. Set aside.
  2. Begin by crushing the graham crackers. You can use a food processor or a ziploc bag with a rolling pin. Transfer the crushed graham cracker crumbs to a medium-sized bowl and combine with the melted butter. Stir until it looks like wet sand. Mini Turtle Cheesecake
  3. Pour a heaping tablespoon of graham crackers into the cupcake liners and press into the bottom. Set aside. Mini Turtle Cheesecake
  4. In the bowl of a stand mixer, combine the softened cream cheese and sugar. Cream until smooth. Scrape the sides and mix again. Mini Turtle Cheesecake
  5. Add in the vanilla and heavy whipping cream. Whip on medium for one minute. Scrape the sides and mix again for another 30 seconds. Mini Turtle Cheesecake
  6. Pour the cheesecake mixture into the prepared pans just until the top of the liner. Place in the fridge and allow to set for approximately 2-4 hours. Mini Turtle CheesecakeMini Turtle Cheesecake
  7. Once chilled, finish with the toppings. Pour about a teaspoon’s worth of caramel sauce over each cheesecake. Follow up with a dollop of melted chocolate and a sprinkle of chopped pecans. Mini Turtle Cheesecake

  • Storage: Cheesecakes can be stored in an airtight container in the fridge for 3 days or in the freezer for 3 months.
  • Can I make these ahead of time? Absolutely! These cheesecakes can be made a day or two in advance and stored in the refrigerator.

  • Can I make this dairy-free? You can substitute the cream cheese and heavy cream with dairy-free alternatives.
