The other night was one of those nights when I was craving something sweet. However, I had limited supplies in the house. So, what’s a girl to do? Well, I knew I had some cream cheese and a few strawberries, along with an opened bag of vanilla wafers. The idea hit me that I could whip up a few of these yummy Mini Cheesecake Cups with Strawberries!
If you love cheesecake, I promise you will fall in love with this easy recipe! This recipe is so simple, has few ingredients, and takes minimal effort to make. Seriously, it couldn’t be easier! But, don’t let easy fool you! It may be an easy recipe, but it has a taste that will drive your taste buds wild! If you don’t like strawberries (is there really anyone that don’t?), you can substitute cherries, blueberries, or simple leave as cheesecake with no fruit. There are no rules here! Mini Cheesecake Cups with Strawberries
Prep Time: 10 mins
Cook Time: 25 mins

Ingredients:
1 pkg (8 oz) Cream Cheese, softened
1/2 cup Sugar
1 tsp Vanilla Flavoring
1 large egg
6 Vanilla Wafers
6 Ripe Strawberries
1 Tbls. Strawberry Topping
6 Foil Muffin Liners
Instructions:
Preheat oven to 325 degrees.
Using 6 foil muffin liners, line 6 muffin pan cups. Place one Vanilla Wafer in each cup.
Add cream cheese, sugar, vanilla flavoring, and egg into a mixing bowl.
Beat with an electric, or stand mixer, until smooth.
Fill muffin cups with batter, dividing evenly. These can be filled almost to the top as they do not rise.
Bake in preheated oven for approximately 25 minutes or until just set. Watch carefully during the last 5 minutes.
While muffins are baking, wash and slice strawberries making cuts from top to bottom in several slits – being careful not to slice completely through.
Remove muffins from oven and allow to set for 3-4 minutes.
Top each cup with a strawberry, fanning just a little.
Brush each strawberry with Strawberry Topping.
Place in refrigerator and allow to chill for at least 15 minutes before serving.
Then serve and enjoy!
