- 1 tbsp Vanilla extract
- 2 large Eggs, room temp
- 1 cup Peanut butter
- 1 ½ cups All-purpose flour
- 1 ½ cup Cake flour
- 1 tbsp Cornstarch
- 1 tbsp Baking soda
- 3/4 tsp Salt
- 1 ½ cups Reese’s Pieces
- 1 cup Chocolate Chips
Peanut Butter Ganache
- ½ cup heavy cream
- ¼ cup peanut butter
- ½ cup white chocolate melting wafers
- ½ tsp vanilla extract
Instructions
Peanut Butter Ganache
Heat the heavy cream in a small pan over medium heat until just before boiling. Remove from heat.
Place peanut butter, white chocolate wafers, and vanilla in a bowl. Pour hot cream over the mixture and let sit for 30 seconds. Whisk until smooth and set aside to firm up.
Cookies
Line a baking sheet with parchment paper.
In a stand mixer, cream cold sliced butter and brown sugar for 2–3 minutes. Add eggs and vanilla; mix another 3 minutes until smooth. Add peanut butter and mix well.
In a separate bowl, whisk together flours, baking soda, cornstarch, and salt. Gradually add dry ingredients to the wet mixture, mixing until combined. Fold in Reese’s Pieces and chocolate chips. Cover and refrigerate dough for 30 minutes.
Scoop dough into 3-ounce portions and flatten slightly.
Place a small ball of ganache on half the dough pieces, top with the remaining dough, seal, and roll into balls.
Chill while oven preheats to 410°F.
