  4. Add the corn, black beans, diced tomatoes, green chiles, rice, water, and taco seasoning. Stir well to combine, then fold in half the cheese.
  5. Pour the mixture into the casserole dish and spread into an even layer. Top with the remaining cheese. 
  6. Bake for 25 minutes, until rice is tender. Allow to set for 5 minutes.
  7. Sprinkle with cilantro, and serve with sour cream.
