Ingredients:

  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs, beaten
  • 1/4 teaspoon salt
  • 1 Tablespoon milk
  • 1 teaspoon vanilla
  • 3 bananas, mashed
  • 1 teaspoon baking soda
  • 2 cups flour

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a standard loaf pan with butter or nonstick spray. You can also line it with parchment paper for easy removal.

  2. In the bowl of a stand mixer (or using a hand mixer), cream together the sugar and butter on medium speed until the mixture is light, fluffy, and pale in color—about 2–3 minutes. This step helps give the bread a soft texture. Banana bread

  3. Add in the eggs, salt, sour milk (or buttermilk), and vanilla extract. Mix on low speed just until everything is combined. Don’t overmix here—just enough to bring the ingredients together.

  4. Peel and mash your ripe bananas (about 2–3 depending on size), then add them to the bowl. Mix on medium speed until the banana is fully incorporated into the batter. A few small chunks are okay—they add texture! banana bread

  5. Sprinkle in the baking soda and gradually add the flour, mixing on low and scraping down the sides of the bowl as needed. Once all the flour is added, give it one final mix to make sure everything is well combined.  banana bread banana bread

  6. Pour the batter into your prepared loaf pan and smooth the top with a spatula. Bake for 1 hour, or until a toothpick inserted in the center comes out clean and the top is golden brown. banana bread

  7. Remove from the oven and let the bread rest in the pan for about 5 minutes. Then carefully turn it out onto a wire rack to cool completely before slicing (if you can wait!). banana breadBanana bread
