Makes 24 cookies
Carrot Cake Cookie Ingredients:
- 2 C grated carrots (grate your own or buy pre-grated carrots in the produce section)
- 1 ½ C old fashioned oats
- 1 C chopped walnuts
- 1 C unsalted sweet cream butter, softened
- 1 ½ C light brown sugar, packed
- ½ C sugar
- 2 large eggs
- 3 tsp pure vanilla extract
- 2 ½ C flour
- 1 tsp baking soda
- 2 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp kosher salt
Cookie Directions:
Preheat oven to 350 degrees and line two cookie sheets with parchment paper .
Using a medium bowl, whisk the flour, baking soda, cinnamon, ginger, nutmeg and salt together.
Using a large bowl, beat the butter, brown sugar and sugar until combined and fluffy.
Beat in the eggs and vanilla until combined.
Gradually beat in the dry ingredients into the wet ingredients until combined.
Fold in the old fashioned oats, chopped walnuts and grated carrots.
Use a small cookie scoop, scoop some dough onto the cookie trays about 2 inch apart
Bake in the oven for 8-10 minutes or until lightly golden brown
Remove and allow to cool completely
