Ingredients:
- 3 cups flour
- 2 teaspoons pumpkin spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup butter, softened
- 1/2 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- ½ cup pumpkin puree
- 1 cup chocolate chips, plus more for topping
Instructions:
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Whisk together the flour, cinnamon, baking soda, baking powder, and salt in a medium bowl. Set aside.
- Add the butter, sugar, and brown sugar to a large bowl. Beat until light and fluffy.
- Add the vanilla and pumpkin puree. Beat to combine.
- Add the flour mixture. Beat until just mixed.
- Fold in the chocolate chips until well combined.
- Use a cookie scoop or tablespoon to scoop the dough onto the prepared baking sheet. Lightly press down the top of the cookies to flatten them slightly and top with more chocolate chips, if desired.
- Bake in the preheated oven for 12 to 15 minutes, until the edges are golden brown, but the center is still slightly soft.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
