- Premade angel food cake
- 3 cups fresh strawberries
- 1 cup fresh blueberries
- ½ cup powdered sugar
- 1 cup heavy cream
- 8 oz cream cheese
- ¼ cup white sugar
- Additional:: 4- 5, 8 oz wine tumblers
Red, White, and Blue Parfait Directions:
Place two cups of strawberries into a blender or food processor and blend until smooth. Strain strawberry liquid through a sieve to remove any seeds. Set aside.
In a large mixing bowl, mix heavy cream at medium to high speed for 3-4 minutes. Pause to scrape the sides and add in the powdered sugar. Continue to mix on high for another minute.
Leave about ½ cup of the whipped cream in the mixing bowl and, transfer the rest into a piping bag or smaller bowl and place in the refrigerator until ready to use.
In the same mixing bowl, add the cream cheese. Mix at medium to high speed for 1 – 2 minutes.
Pause to scrape the sides. Add the white sugar and ½ cup of the strawberry liquid and continue to mix for another 1 – 2 minutes. Transfer to a bowl or piping bag.
Crumble the angel food cake into small pieces and slice the remaining 1 cup of strawberries to use as decorations for the sides of the cups.
To assemble, place a layer of angel food cake on the bottom. Line the outside with sliced strawberries and place the strawberry cream cheese in the middle.
Add another layer of angel food cake, then a layer of whipped cream, and a layer of blueberries.
Repeat the layers again – angel food cake, line with strawberries, fill the center with cream cheese and top with whipped cream.
Place in the refrigerator until ready to eat and enjoy!
