St. Patrick’s Day is always that holiday I love, but I forget about. I’m always scrambling to wash the green clothes, grabbing rainbow craft supplies, and baking something green ON St. Patrick’s Day. I think that’s how it is supposed to be. Don’t you? I mean, why else would so many people get pinched if St. Patrick’s Day wasn’t a day half of everyone forgot about? Food for thought, but….
Let’s just focus on the food!

I think brown and green just naturally go together, don’t you? These Andes Mint Cupcakes from Thrifty Jinxy look like they were created to be placed together — like THIS is the intended use for Andes Mint, to be added to THAT cupcake! (smile)

I don’t think I have ever seen more perfect slices of fruit arranged in a more beautiful way! It’s so pretty I don’t think I can wait until St. Patrick’s Day to make mine! I’m seeing chocolate lasagna all over the place lately because they are so easy to layer into a beautiful dish. One of my favorites is from Amanda’s Cookin! She created a mint chocolate lasagna that is perfect for St. Patrick’s Day because it has a bright green burst of color in the center! It’s a little bit of a surprise just waiting to reveal itself when you cut it! Grab the Mint Chocolate Lasagna recipe from Amanda’s Cookin HERE.

There’s something magical about watching a child talk about rainbows, leprechauns, and pots of gold. They have these beautifully lit faces that go on, and on. It makes you want to chase rainbows with them. It makes you want to find that pot of gold for them too. While this cake doesn’t have pots of gold at the end, it does have a delicious cereal cake to enjoy! Find the recipe at Smashed Peas & Carrots HERE.
