We love potatoes and here at our house, hardly a meal goes by without some form of potatoes. But, just how many ways can you actually serve potatoes without them getting boring? Ha! Well, that depends! Since discovering Wish-Bone® E.V.O.O dressings, it has opened up a whole smorgasbord of options! Just check out these delicious Roasted Red Pepper Smashed Potatoes!
While the recipe actually called for the Wish-Bone® E.V.O.O. Caesar Vinaigrette Dressing (which I’m sure would be delicious), the hubs requested I use the Roasted Red Pepper. What can I say? He loves roasted red pepper, so I thought – why not? The Wish-Bone® E.V.O.O. Roasted Red Pepper dressing has a blend of roasted red pepper, garlic and red wine vinegar. It gave the smashed potatoes a slight fresh tang and was an absolute delicious change of pace! These yummy smashed potatoes are perfect served with Caesar Chicken Breast and a fresh Romaine Salad with Caesar Vinaigrette Dressing for a super quick weeknight meal!
Roasted Red Pepper Smashed Potatoes
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Serves 4
Ingredients:
1/2 cup Wish-Bone® E.V.O.O Roasted Red Pepper Dressing
1-1/2 lbs. (4 large or 6 medium) all purpose, Yukon or red potatoes, cut into 1-inch chunks (I leave the skin on)
Salt and pepper to taste
Instructions:
Cut potatoes into 1-inch chunks and place in saucepot, covering with water.
Bring to a boil over high heat and boil 15 minutes or until potatoes are tender.
Drain off the water and add ½ cup Dressing and salt and pepper to taste.
Mash until desired consistency. We love them kind of chunky, so I simply stirred in the dressing with a spoon until mixed through.
