Roasted Red Pepper Smashed Potatoes

  • ½ cup Wish-Bone® E.V.O.O Roasted Red Pepper Dressing
  • 1-1/2 lbs. (4 large or 6 medium) all purpose, Yukon or red potatoes, cut into 1-inch chunks
  • Salt and pepper to taste
  1. Cut potatoes into 1-inch chunks and place in saucepot, covering with water.
  2. Bring to a boil over high heat and boil 15 minutes or until potatoes are tender.
  3. Drain off the water and add ½ cup Dressing and salt and pepper to taste.
  4. Mash until desired consistency. We love them kind of chukky, so I simply stirred in the dressing with a spoon until mixed through.
