I have worked-out off, and on, since High school. One thing that I have learned is that the most exciting part is finding and trying out new routines to try to push your body to its limits. Any Athlete will tell you that no matter how much you work out, if you don’t have a great meal plan to follow, you are not achieving your full potential.

Meal Prep has always been my greatest struggle. The time it takes to count all of the nutrition factors and to make sure you are getting the proper amounts of nutrients is a daunting task that I quickly lose interest in.  Thomas Cox has come up with a solution for those, like me, who struggle with creating the best meal plan.  If you are looking to live a healthy lifestyle, wanting to achieve weight-loss, or in the midst of strength training, you have to check out MealFit.

MealFit has two different plans, the original package or the strict package. The original package seems to be catered towards anyone who is in the leaning phase of their routine or anyone who is looking to lose weight. It is 95% Paleo, but will include some meals with cheese, peanut butter, etc. The Strict package is just like it sounds, a stricter meal plan that is 100% Paleo and is set up for zone eating. This Package is for the athlete who is counting the number of macro-nutrients that they consume daily. The recipes seem to be packed full with protein and is also gluten free.

The meal plan is set up for a week at a time and includes breakfast, dinner, and snacks.  The recipes that you get look like meals served in a five-star restaurant. It sure beats eating the same boring meals over and over because you really don’t know what’s best to eat.

Wait! Um…. lunch? Do I skip that?

No, MealFit lunch incorporates dinner leftovers from the night before. This is a great way to have your meal already prepared and is perfect for those who are busy during the day.  Additionally, using leftovers is one way to save on your grocery bill.

What is MealFit?

MealFit is NOT a food delivery service!  Instead, MealFit provides you with a complete meal plan, menu, and recipes to follow over the course of one week.  Plans are emailed each Friday AND include a grocery list so you can quickly pickup your groceries at the end of your work week, or over the weekend.  I really like the grocery list!  With my strict dietary needs my wife has struggled to shop and setup meals for me.  It’s become a frustrating problem for her.  MealFit may be the answer to our struggle because I can shop for myself, or she can pull recipes from the menu for the whole family to enjoy.

We wanted to share a recipe with you from one of MealFit’s weekly meal plans to give you an idea of what type of recipes are included.  Over the years we have run into several programs we felt didn’t want you to enjoy food, at all.  Thomas at MealFit shows that you can have restrictions in your diet without feeling like you are sacrificing. 

Pecan Pie LaraBars

Ingredients:

1 cup Pecans and Almonds

1 cup Dates

Instructions:

In your food processor, mix together fruit and nuts until a sticky, workable dough is formed. Shape into six equal sized bars, and wrap in parchment paper or plastic wrap.  If you’re in a hurry, you can shape the dough into eight to twelve balls instead. You can keep these in the refrigerator or freezer in an airtight container for up to a month.

MealFit Weekly Menu Snack RecipeNote: we purchased 1/2 cup packages of chopped pecans and almonds. We also used whole dates as they are much more flavorful and moist than pre-chopped dates.

I tossed everything into my NutriNinja Auto IQ food processor and let it do all of the work.  At first glance, I didn’t think it worked. However, after removing a spoonful I found that it was, indeed, sticking together very easily.

If you are making bars, it helps if you divide your dough by how many bars you are making before you begin shaping them.  I rolled them into a log first and then pressed them into the “bar” shape.  We opted to use plastic wrap and it worked very well, no sticking at all.

I didn’t tell my husband what these bars were called and he immediately picked up on the “Pecan Pie” flavor.   His response was

“Wow! That tastes like Pecan Pie filling!  All that was is nuts and dates?”

Yes!  Just nuts and dates and the bars taste great – just like pecan pie, without all the guilt!
