  • 2 lbs thick bone-in pork chops
  • 1.5 lb baby red potatoes 
  • 2 cups baby carrots 
  • 1 zucchini 
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 1 1/2 tbsp fresh thyme, chopped
  • ½ tsp pepper
  • ¼ tsp salt

Directions:

  1. Preheat the oven to 375 degrees.
  2. Cut any larger potatoes in half if needed. Slice the zucchini into 2-inch pieces, then slice those in half.
  3. In a small bowl, whisk together the honey, 1 ½ tbsp of olive oil, and ½ tbsp of fresh chopped thyme. Sheet Pan Honey Glazed Pork Chops
