Where does the term Buckeye come from?

The irresistible combination of peanut butter and chocolate in these treats is affectionately named “Buckeye” after the nut of the Ohio Buckeye tree, which is the state tree of Ohio. This dark brown nut features a lighter tan patch, making it strikingly resemble the eye of a deer, or a “buck’s eye.” Just like the partially exposed nut, these candies and cookies are typically made by dipping a peanut butter confection into chocolate, leaving a small circle of the peanut butter visible, thus mimicking the natural look of the buckeye nut.

Ingredients:

Crumbl Buckeye cookies

For the brownie cookie base – 

  • 1 c unsalted butter, melted
  • 1 c brown sugar
  • ½ c sugar
  • 2 eggs
  • 1 t vanilla
  • 1 ¾ c flour
  • 1 c cocoa powder
  • 1 t salt
  • 1 t baking soda
  • 2 c semi-sweet chocolate chips

For the peanut butter filling – 

  • ½ c unsalted butter, softened
  • 1 c creamy peanut butter
  • 2 c powdered sugar
  • 1 t vanilla

For the chocolate ganache – 

  • 2 c semi-sweet chocolate chips
  • ¾ c heavy cream

Directions:

  1. Preheat the oven to 350 degrees.  Line a couple of baking sheets with parchment and set aside.
  2. For the cookies:  melt the butter in a microwave-safe bowl and allow to cool slightly. 

  3. In the bowl of a stand mixer, combine the brown sugar, sugar, and butter. Buckeye Brownie Cookies Combine until smooth. 
  4. Add in the vanilla and eggs and mix well, scraping down the sides often. Buckeye Brownie Cookies
  5. Add in the remaining dry ingredients: flour, baking soda, salt, and cocoa powder.  Mix on low just until combined. Buckeye Brownie Cookies
  6. Scrape down the sides and add in the chocolate chips. Buckeye Brownie Cookies Fold to combine until evenly distributed. 
  7. Using an ice cream scoop or two spoons, shape the cookie dough and place the mounds on the prepared baking sheets at least 2-3 inches apart.  Buckeye Brownie Cookies
  8. Bake in the preheated oven for 11-12 minutes or until the centers are set.  Allow to cool completely before assembling. 
  9. For the peanut butter filling

    – in the bowl of a stand mixer, combine the peanut butter and softened butter.  Cream until smooth. Buckeye Brownie Cookies

  10. Add in the vanilla and the powdered sugar.  Mix on low until combined and then bump up the speed to medium to whip until smooth. Buckeye Brownie Cookies It should be a thick, frosting-like consistency.  Set aside until ready to assemble. Buckeye Brownie Cookies

For the ganache – in a microwave-safe bowl, combine the chocolate chips and ganache.  Buckeye Brownie CookiesMicrowave for one minute and stir well.  If needed, heat for another 15-30 seconds and stir well until all the chips have melted.  Crumbl Buckeye CookiesSet aside to cool until assembly.   12. To assemble – once the cookies have cooled completely, spread a thin layer of the peanut butter filling over the top of each cookie.  Spread with an offset spatula or butter knife. Crumbl Buckeye Cookies

Storage:  Cookies should be stored in an airtight container.  At room temperature, they will last about 3 days or in the fridge for about 7.
