Grinch Cake Mix Cookies

This year, while watching one of my favorite Christmas Movies– “How The Grinch Stole Christmas” why not add a little sweetness to the mix? Make these fun and easy Grinch Cake Mix Cookies with your kids.  The best part- they are frosted- who can resist a frosted cookie?

We love making Cake Mix cookies! They are so easy and they are light and fluffy! These Grinch Cake Mix Cookies are even frosted for more sweetness for your Grinch!

  • Makes 24 cookies
  • Prep time: 10 minutes
  • Bake time:9 minutes
  • Frosting time: 10 minutes

Grinch Cake Mix Cookie Ingredients:

Grinch Cake Mix Cookies

  • 1 box of white cake mix
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup powdered sugar
  • 1 tbsp milk
  • 1 tsp vanilla
  • green food coloring
  • yellow food coloring
  • Red heart sprinkles

Grinch Cake Mix Cookie Directions:

Preheat the oven to 350 degrees.

Line a baking sheet with parchment paper.

Add cake mix, eggs, and vegetable oil to a large bowl and stir well.

Add equal amounts of green and yellow food coloring to get your desired “Grinch” color. I used 4 drops of each.

Using a cookie scoop, drop scoops of dough onto a baking sheet, 1-2 inches apart.

Bake for 9 minutes. Remove from the oven, and set the baking sheet on a wire cooling rack for one minute.

Remove cookies from the baking sheet, onto the wire cooling rack. Allow cookies to cool completely.

Frosting Directions:

Mix the powdered sugar, milk, and vanilla in a small bowl.

Add 2 drops each of green and yellow food coloring. Stir well.

Check the consistency. It should be just perfect – not too runny, and not too thick.

Spread icing on the cookies.
