Keto Cobb Salad (bonus Ranch Dressing Recipe)

One of my favorite salads has always been a Cobb Salad!  It’s the perfect lunch- all that protein and salad in one bowl with this amazing homemade Ranch Dressing!  The Cobb Salad is perfect for those on the Keto Diet! This salad is one of my favorites- all the protein, fiber and homemade ranch dressing make and excellent flavor explosion in your mouth!

Why is it called a Cobb Salad?

 An instant classic, the Cobb is a chopped salad made up of lettuce, hard-boiled eggs, chicken, bacon, avocado, Roquefort cheese (blue cheese is often substituted), tomatoes, and red wine vinaigrette. I’ve always eaten mine with Ranch Dressing. It is hearty and filling, and a little bit decadent as far as salads go. And yes, it was actually named after a person.

The most common legend says that the Cobb salad was a spur of the moment invention of necessity. Supposedly, a very hungry Robert “Bob” Cobb, owner of the popular Brown Derby restaurant on trendy Wilshire Boulevard, was in the restaurant kitchen late one night. He pulled out what was available, so a little bit of this and a little bit of that into his salad, which included leftover hard-boiled eggs and roast chicken. Not dreaming he would ever add this kitchen sink salad on the menu, he shared it with his friend Sid Grauman of the legendary Grauman’s Chinese Theatre. It was so delicious that the next day, Grauman came back asking for a “Cobb Salad.” It’s funny to think of celebrities fawning over leftovers, but when the Cobb salad hit the Brown Derby menu in 1937, a star was truly born.

Serves: 4

Ranch Dressing Ingredients: 

  • ½ c. Avocado mayonnaise (or regular mayonnaise)
  • ¼ c. Greek yogurt
  • 1½ T. fresh chives, chopped
  • 1 T. fresh dill, chopped
  • 1 T. fresh parsley, chopped
  • ¼ t. smoked paprika
  • ½ t. garlic powder
  • ½ t. onion powder
  • Pinch cayenne pepper
  • Sea salt and black pepper, to taste
  • 1 t. Worcestershire sauce
  • ¼ c. buttermilk

Cobb Salad Ingredients:

  • 1 large head Romaine lettuce, washed and chopped
  • 4 strips thick-cut bacon, cooked crispy
  • 4 hard-boiled eggs, sliced
  • ¾ lbs. rotisserie chicken breast, sliced
  • 1 large avocado, sliced
  • 1 medium cucumber, peeled and cut into half-rounds
  • 3 oz. blue cheese
  • 1 T. fresh chives, chopped
  • 1 large lime, cut into 8 wedges

Keto Kobb Salad

Dressing and Salad Directions:

  1. To prepare the ranch dressing, combine all the ingredients in a large bowl and whisk to combine.
  2. Taste and adjust seasonings as desired. Cover and refrigerate until ready to use. Tip: For best results, prepare the ranch dressing the night before to give the flavors a chance to develop.  
  3. To prepare the salad, divide the Romaine lettuce among four serving bowls and top each bowl with equal amounts of bacon, hard-boiled egg, chicken breast, avocado, cucumber, and blue cheese.
  4. Top with the fresh chives and serve immediately with the ranch dressing and/or fresh lime wedges on the side.
  5. Enjoy!
