Pecan Pie is one of my very favorite pies so it is no wonder that I fell in love with these delicious Pecan Pie Cupcakes! They have just the right amount of richness and sweetness to tantalize your sweet tooth without being overly sweet. They are also easy to make following the step-by-step instructions.

Makes 22 Cupcakes
Cupcake Ingredients:
1 box of spice cake mix
3 large eggs
1/2 C unsalted sweet cream butter, softened
1 C whole milk
Pecan Pie Topping Ingredients:
1/4 C sugar
1/4 C brown sugar
2 tbsp cornstarch
3/4 C light corn syrup
4 tbsp unsalted sweet cream butter, melted
1/2 tsp kosher salt
2 large eggs, lightly beaten
1 1/2 C Chopped Pecans
1 tsp pure vanilla extract
Cinnamon Frosting Ingredients:
1 C unsalted sweet cream butter, softened
2 1/2 C powder sugar
1 tsp vanilla
1 tbsp ground cinnamon
3-5 TBSP heavy whipping cream
1 large piping bag, fitted with a star tip
Cinnamon Sugar Pie Crust Ingredients:
1 premade pie crust, unrolled
1/4 C unsalted sweet cream butter, melted
1/2 C sugar
3 tbsp ground cinnamon
1 cookie sheet fitted with parchment paper
Mini maple leaf cookies
Cupcake Directions:
Preheat oven to 350 degrees
Using a standing mixer, combine the cake mix, eggs,
milk and butter and mix until combined
Scoop cupcake batter into the liners, filling 3/4 way full
Bake in the oven for 21 minutes.
While the cupcakes are baking, make the pecan pie filling
Pecan Pie Topping Directions:
Using a medium saucepan stir together all filling ingredients EXCEPT pecans and vanilla.
Bring to a boil.
Remove from heat and stir in pecans and vanilla. Pour into a bowl. Let mixture cool on the counter for 10 minutes and then refrigerate for 1 hour
Scoop out the center of each cupcake and fill with the filling
Cinnamon Frosting Directions:
Using a stand mixer, combine all ingredients and mix on medium speed.
Mix until you see stiffed peaks in your frosting and scoop into piping bag
Cinnamon Sugar Pie Crust Directions
Preheat oven to 350
Mix the cinnamon and sugar together
Unroll the pie crust and place it onto the cookie sheet
Brush the melted butter onto the top of the pie crust
Sprinkle the cinnamon sugar mixture onto the pie crust
Using the cookie cutter, cut out leafs
Place into the oven for about 10-12 minutes or until lightly golden brown
Allow to cool to room temperature
Decorating ingredients and Directions:
Using the piping bag, pipe frosting onto the cupcake
Sprinkle some chopped pecans on top and place a maple leaf on top
