Pecan Pie Cupcakes Recipe

  • Cupcake Ingredients:

  • 1 box of spice cake mix
  • 3 large eggs
  • ½ C unsalted sweet cream butter, softened
  • 1 C whole milk

  • Pecan Pie Topping Ingredients:

  • ¼ C sugar
  • ¼ C brown sugar
  • 2 tbsp cornstarch
  • ¾ C light corn syrup
  • 4 tbsp unsalted sweet cream butter, melted
  • ½ tsp kosher salt
  • 2 large eggs, lightly beaten
  • 1½ C Chopped Pecans
  • 1 tsp pure vanilla extract

  • Cinnamon Frosting Ingredients:

  • 1 C unsalted sweet cream butter, softened
  • 2½ C powder sugar
  • 1 tsp vanilla
  • 1 tbsp ground cinnamon
  • 3-5 TBSP heavy whipping cream
  • 1 large piping bag, fitted with a star tip

  • Cinnamon Sugar Pie Crust Ingredients:

  • 1 premade pie crust, unrolled
  • ¼ C unsalted sweet cream butter, melted
  • ½ C sugar
  • 3 tbsp ground cinnamon
  • 1 cookie sheet fitted with parchment paper
  • Mini maple leaf cookies
  1. Cupcake Directions:

  2. Preheat oven to 350 degrees
  3. Using a standing mixer, combine the cake mix, eggs,
  4. milk and butter and mix until combined
  5. Scoop cupcake batter into the liners, filling ¾ way full
  6. Bake in the oven for 21 minutes.
  7. While the cupcakes are baking, make the pecan pie filling

  8. Pecan Pie Topping Directions:

  9. Using a medium saucepan stir together all filling ingredients EXCEPT pecans and vanilla.
  10. Bring to a boil.
  11. Remove from heat and stir in pecans and vanilla. Pour into a bowl. Let mixture cool on the counter for 10 minutes and then refrigerate for 1 hour
  12. Scoop out the center of each cupcake and fill with the filling

  13. Cinnamon Frosting Directions:

  14. Using a stand mixer, combine all ingredients and mix on medium speed.
  15. Mix until you see stiffed peaks in your frosting and scoop into piping bag

  16. Cinnamon Sugar Pie Crust Directions

  17. Preheat oven to 350
  18. Mix the cinnamon and sugar together
  19. Unroll the pie crust and place it onto the cookie sheet
  20. Brush the melted butter onto the top of the pie crust
  21. Sprinkle the cinnamon sugar mixture onto the pie crust
  22. Using the cookie cutter, cut out leafs
  23. Place into the oven for about 10-12 minutes or until lightly golden brown
  24. Allow to cool to room temperature

  25. Decorating ingredients and Directions:

  26. Using the piping bag, pipe frosting onto the cupcake
  27. Sprinkle some chopped pecans on top and place a maple leaf on top
  28. Enjoy!
