Ingredients:

Apple Coffee Cake

  • 1 ¾ cups all-purpose flour
  • 1 cup light brown sugar, packed 
  • 1 tsp cinnamon powder
  • ¼ tsp salt
  • 1 cup unsalted butter, divided
  • 13.25 oz box vanilla cake mix
  • 2 tbsp vegetable oil
  • 2 tsp vanilla
  • 2 large eggs, room temperature
  • ¾ cup sour cream, room temperature 
  • 21 oz Apple pie filling
  • ½ cup powdered sugar 
  • 2 tbsp milk

Directions:

  1. Preheat the oven to 350 degrees. Line a 9×13-inch baking dish with parchment paper.
  2. Make the Crumb Topping: Place ¾ cup of the butter in a saucepan and melt over medium-low heat. Continue to cook and stir until the butter gets bubbly.
  3. Whisk together the flour, brown sugar, cinnamon, and salt in a large bowl until no longer lumpy. Apple Coffee Cake
  4. Pour in the butter, and gently mix into the dry ingredients. Mix until you no longer see white bits of flour, but it will be crumbly. Chill in the refrigerator while you prepare the cake batter. Apple Coffee Cake
  5. Make the Cake Batter: In a large bowl, whisk together the cake mix,  4 tbsp of melted butter, vegetable oil, vanilla, eggs, and sour cream. Apple Coffee CakeApple Coffee Cake
  6. Spread the cake batter in the prepared cake pan. Apple Coffee Cake
  7. Top with the apple pie filling in the center, leaving just a small amount of batter poking out the sides. Apple Coffee Cake
  8. Now sprinkle the crumble topping from the refrigerator over the top, breaking apart large chunks slightly with your hands. Apple Coffee Cake
  9. Bake for 55 minutes-60 minutes, until a toothpick inserted in the center comes out with no batter marks.
  10. Allow the cake to cool,
  11. Make the Glaze: Mix the powdered sugar and milk together to make the glaze, then drizzle it over the top of the cake. Apple Coffee Cake
