And, you may be thinking they are hard to make, but you would be wrong! Actually, they are super easy and what can be more fun than these Beef & Vegetable Mini Pot Pies?! There is something about mini-sized versions that makes them that much more delicious!
Ingredients
- 2 cups low-sodium beef broth
- 1 medium onion, cut into chunks
- 1 tablespoon minced garlic
- 3 ½ to 4 pound corned beef brisket or round (with pickling spice packet)
- Sliced potatoes
- Carrots
- 1 small head of green cabbage
- Salt and pepper (to taste)
Instructions

Add the beef broth, salt, pepper, and minced garlic to the insert of a 6- to 8-quart Instant Pot.

Place the corned beef brisket on top of the mixture.

Sprinkle the pickling spices (included with the corned beef) over the top.

Close and lock the lid.

Select MANUAL, set to HIGH pressure, and cook for 1 hour and 10 minutes.

When cooking is complete, allow for a natural pressure release.

Remove the corned beef and set it aside.

Add the potatoes, carrots, onion, and cabbage into the Instant Pot with the remaining juices.
