For the Cookies

  • ½ cup unsalted butter, softened
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ¼ cup oil
  • 1 egg
  • 1 teaspoon vanilla
  • 2 ¼ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon cornstarch
  • ⅓ cup toffee pieces

For the Topping

  • 8 oz caramel candies, unwrapped
  • ⅓ cup heavy cream
  • ½ cup chocolate chips, melted

Instructions

1. Prep Your Oven and Caramel

Preheat the oven to 350°F and line two baking sheets with parchment paper.
In a microwave-safe bowl, combine the caramel candies and heavy cream. Microwave in 30-second intervals, stirring in between, until completely smooth. Set aside to cool while the cookies bake. Twix Cookies

2. Make the Cookie Dough

In the bowl of your stand mixer, cream together the softened butter, sugar, and brown sugar until smooth and fluffy.  Twix Cookies

Add the flour, cornstarch, salt, and baking powder. Mix until fully combined, then fold in the toffee pieces. Twix Cookies

3. Shape and Bake

Using a large ice cream scoop, portion the dough onto the prepared baking sheets. Twix Cookies
Use the bottom of a glass or measuring cup to gently flatten each scoop into a thick disc, about ½ inch tall. Twix Cookies

4. Melt the Chocolate

Instructions

  1. Preheat the oven to 350 degrees.  Line a couple baking sheets with parchment, set aside.  
  2. In a medium sized microwave-safe bowl, combine the caramel and heavy cream.  Heat in 30 second increments and stir between each interval until the caramel is smooth and creamy.  Allow to cool at room temp while the cookies bake. 
  3. In the bowl of a stand mixer, combine the softened butter, sugar and brown sugar.  Cream until smooth. 
  4. Add in the oil, egg and vanilla.  Mix well, scraping down the sides often.  
  5. Add in the flour, corn starch, salt, and baking powder.  Mix thoroughly, scraping down the sides often.  
  6. Add in the toffee pieces and fold to combine.  
  7. Using a large ice cream scoop, divide the batter and place the scoops on the prepared baking sheet.  
  8. Use the bottom of a glass cup or measuring cup to flatten the dough into a disc about ½ inch thick.  
  9. Bake in the preheated oven for 10-12 minutes or until the edges are just barely beginning to brown and the centers are set.  Allow to cool completely before assembly. 
  10. In another medium microwave-safe bowl, melt the chocolate in 30-second increments and stir between each interval until smooth.  Allow to cool to room temp. 
  11. To assemble - once the cookies are cool, scoop a spoonful of caramel onto each cookie and spread evenly.  
  12. Top with a spoonful of melted chocolate and spread evenly. 
  13. Optional - place the assembled cookies in the fridge or freezer to set the caramel and/or chocolate quicker.
