Ingredients

  • • 2 cups sugar
  • • 2 eggs
  • • 4 cups apples, peeled and chopped
  • • 3 cups flour
  • • 1 teaspoon salt
  • • 1 teaspoon cinnamon
  • • 2 teaspoons baking soda
  • • 2/3 cup oil
  • • 2 teaspoons vanilla
  • Topping:
  • • 1 cup brown sugar
  • • 1/2 cup flour
  • • 1/2 cup butter, softened
  • • 1 cup nuts, chopped

Instructions

Preheat oven to 350 degrees. Grease a 9x13 baking dish.

In the bowl of a stand mixer,beat sugar and eggs together.

Add apples. Mix on low speed.

Add dry ingredients and mix well on medium speed.

Add oil and vanilla. Mix until combined and pour into a greased pan.

To make topping: Combine all ingredients and mix until crumbly. Spread over top of the batter.

Bake at 350 degrees for 1 hour.

Remove from oven. Serve warm and topped with whipped cream or non-dairy topping.



Notes

To store: Let the cake cool completely, then cover it tightly with plastic wrap or transfer it to an airtight container. It will stay fresh at room temperature for up to 2 days, or you can refrigerate it for up to 5 days. To reheat, pop a slice in the microwave for about 15–20 seconds — just enough to bring back that warm, “fresh-from-the-oven” magic.

To freeze: You can freeze the whole cake or individual slices for up to 3 months. Wrap well in plastic and foil (or store in a freezer-safe container), then thaw overnight in the fridge and warm before serving.
