Ingredients:
For the blondies –
- ¾ c unsalted butter
- ¾ c apple butter
- 1 ½ c brown sugar, divided
- 2 eggs
- 1 T vanilla
- 2 ½ c flour
- 1 t baking powder
- 2 t cinnamon, divided
- ¼ t nutmeg
- ½ t salt
- 2 medium apples, diced (Honeycrisp, Granny Smith or Gala recommended)
For the glaze –
- 3 T unsalted butter
- 3 T maple syrup
- 1 c powdered sugar
- ½ t cinnamon
- ¼ t salt
Directions:
- Preheat the oven to 350 degrees. Spray or line a 13×9 baking dish and set aside.
- In a medium saucepan, heat the butter over medium heat until melted and beginning to brown. Allow to cool for about 10 minutes.
- Add in the apple butter and 1 cup of the brown sugar. Stir well.
- Add in the eggs and vanilla and mix again.
- Finally, add the flour, baking powder, 1 teaspoon of cinnamon, nutmeg, and salt. Stir just until combined.
- Spread the batter into the prepared baking dish.
- In a small bowl, combine the diced apples, the remaining brown sugar, and the remaining cinnamon. Toss to coat.
- Sprinkle the apples over the batter evenly.
- Bake in the preheated oven for approximately 30 minutes or until the center is set and the edges are just starting to brown. Allow to cool.
- To make the glaze – in a small saucepan, heat the butter over medium heat until it melts and then begins to brown.
- Add maple syrup, powdered sugar, cinnamon, and salt. Whisk well.
- Drizzle the glaze over the baked blondies. Allow to set.
