For the cookie base –
- ½ c unsalted butter
- ½ c sugar
- ¼ c brown sugar
- 1 egg
- 1 t vanilla
- 1 ½ c flour
- 1 ½ c graham crackers, crushed and divided
- ½ t salt
- ½ t baking soda
- ½ t baking powder
For the filling –
- 5 oz cream cheese, softened
- ⅓ c sweetened condensed milk
- ¼ c key lime juice
- 1 T key lime zest
For Decoration-
- Whipped topping, optional
- Key lime slices, optional
Directions:
- Preheat the oven to 350 degrees. Line a couple of baking sheets with parchment and set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter and sugars. Cream until combined.
- Add in the egg and vanilla and mix well.
- Add in the flour, 1 cup worth of the crushed graham crackers (reserving the rest for a later step), salt, baking soda and baking powder. Mix well, scraping the sides often.
- Use an ice cream scoop to scoop out the dough and then roll each ball in the remaining crushed graham crackers.
- Place on the prepared baking sheets.
- Use the bottom of a tablespoon (or similar) to create an indent in the center of each cookie.
- Bake in the preheated oven for 10 minutes. Remove from the oven and use the bottom of a ½ cup measuring cup to increase the indent in the center of each cookie. Immediately return to the oven and bake for an additional 2-4 minutes or until the center is set.
- Allow to cool completely before filling.
- For the filling – in the bowl of a stand mixer, combine the softened cream cheese and the sweetened condensed milk. Mix on medium until smooth.
- Add in the key lime juice and the key lime zest. Mix until combined.
- Transfer the filling to a piping bag and cut a small opening.
- Pipe the filling into the center of each cookie.
- Chill in the fridge for about 2 hours or until set.
- Top with whipped cream and a slice of key lime, if desired.
Storage: Cookies should be stored in an airtight container in the fridge for up to 3 days.
