Ingredients:

Key lime cookies

For the cookie base – 

  • ½ c unsalted butter 
  • ½ c sugar
  • ¼ c brown sugar
  • 1 egg
  • 1 t vanilla
  • 1 ½ c flour
  • 1 ½ c graham crackers, crushed and divided
  • ½ t salt
  • ½ t baking soda
  • ½ t baking powder

For the filling – 

  • 5 oz cream cheese, softened
  • ⅓ c sweetened condensed milk
  • ¼ c key lime juice
  • 1 T key lime zest

For Decoration-

  • Whipped topping, optional
  • Key lime slices, optional

Directions:

  1. Preheat the oven to 350 degrees.  Line a couple of baking sheets with parchment and set aside. 
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter and sugars.  Cream until combined. Crumble key Lime Cookies

  4. Add in the flour, 1 cup worth of the crushed graham crackers (reserving the rest for a later step), salt, baking soda and baking powder.  Mix well, scraping the sides often.  Crumble key Lime CookiesCrumble key Lime Cookies
  5. Use an ice cream scoop to scoop out the dough and then roll each ball in the remaining crushed graham crackers.  Crumble key Lime Cookies
  6. Place on the prepared baking sheets.  
  7. Use the bottom of a tablespoon (or similar) to create an indent in the center of each cookie. Crumble key Lime Cookies
  8. Bake in the preheated oven for 10 minutes.  Remove from the oven and use the bottom of a ½ cup measuring cup to increase the indent in the center of each cookie.  Immediately return to the oven and bake for an additional 2-4 minutes or until the center is set.  
  9. Allow to cool completely before filling.  
  10. For the filling – in the bowl of a stand mixer, combine the softened cream cheese and the sweetened condensed milk.  Mix on medium until smooth. Crumble key Lime Cookies

  12. Transfer the filling to a piping bag and cut a small opening.

  14. Chill in the fridge for about 2 hours or until set.
