  1. Heat olive oil in a 10-inch nonstick skillet over medium-high heat. Sauté onions and bell peppers for 2 to 3 minutes, stirring occasionally, until crisp-tender.
  2. Beat eggs, milk, salt, and pepper in a medium bowl with a fork or wire whisk until well mixed. Pour the egg mixture over the vegetables in the skillet.
  3. Reduce the heat to medium. Cook for 4 to 6 minutes, stirring frequently, until the eggs are set but still moist. Easy Breakfast Burrito
