Healthy Egg Muffin Cup Ingredients:
- 4 eggs
- ½ red pepper
- 100 g (3/4 cup) Mozzarella
- 10-15 olives
- 30 g (1/4 cup) spinach
- Salt to taste
- Pepper to taste
Healthy Egg Muffin Cup Instructions:
Preheat the oven to 350 degrees. Spray a muffin tin with non-stick spray or coconut oil
Prepare your vegetables:
Cut the olives into rings. Cut the pepper into small cubes. Chop the spinach finely.
Grate the cheese or use shredded Mozzarella cheese.
Whisk the eggs with salt and pepper until the mixture is frothy.
Put your veggies into the muffin cups.
Then add cheese and egg mixture- pour until the muffin cups are 3/4 full.
Bake in the oven about 15-20 minutes.
