Ingredients:

Berry Cobbler

For the filling – 

  • 8 cups worth of fresh berries – sliced strawberries, blueberries, raspberries, blackberries, etc
  • ⅓ c sugar
  • 2 T cornstarch
  • 1 t lemon juice
  • 1 t vanilla

For the topping – 

  • 1 ½ c flour
  • ⅓ c sugar
  • 1 ½ t baking powder
  • ½ t salt
  • 6 T unsalted butter, cubed
  • ½ c milk
  • 1 T turbinado sugar, optional

Berry Cobbler

Directions:

  1. Preheat the oven to 350 degrees.  Spray a 13×9 baking dish and set aside. 
  2. In a large bowl, combine the berries, sugar, lemon juice, cornstarch and vanilla.  Toss gently to coat.  Berry Cobbler
  3. Transfer the berries to the bottom of the baking dish and spread evenly.  Berry Cobbler
  4. In another medium-sized bowl, combine the flour, sugar, baking powder, and salt.  Stir to combine. 
  5. Add in the diced butter and, using forks or a pastry cutter, cut the butter into the dry ingredients until it’s about pea-sized.  Berry Cobbler
  6. Add in the milk and continue to cut the mixture until it is thoroughly combined and holds its shape when pressed together.  It will be a little on the dry side, but that is perfect. Berry CobblerBerry Cobbler
  7. Sprinkle the topping over the berries in the baking dish.  Berry Cobbler
  8. Sprinkle with the additional turbinado sugar, if desired.  Berry Cobbler
  9. Bake in the preheated oven for about 50 minutes or until the mixture is bubbly and the topping is slightly browned.  
  10. Allow to cool slightly before serving.  Serve with ice cream or whipped cream, if desired.

Storage:  Cobbler can be stored in an airtight container in the fridge for up to 3 days.
