Well, today, we’re absolutely thrilled to share our super healthy and incredibly delicious Mixed Berry Ice Pops with Greek Yogurt recipe with you, designed to be a guilt-free pleasure you’ll crave all season long.
Oh my goodness, these ice pops are so wonderfully fruity and yummy, you truly won’t believe they’re good for you! As a matter of fact, packed with wholesome ingredients like vibrant mixed berries and creamy Greek yogurt, these aren’t just a snack – you can actually enjoy one for breakfast! Imagine the look on your kids’ faces when you tell them they can have an ice pop to start their day. Get ready to blend up some serious smiles and enjoy a refreshing treat that’s as nourishing as it is delightful!
This Mixed Berry Ice Pops with Greek Yogurt recipe is also very forgiving. If your measurements aren’t exact, don’t worry! You can’t go wrong! You can also substitute other favorite berries instead of the blueberries and strawberries. I’ve tried blackberries and raspberries and the ice pops were just as delicious! You can also substitute sugar for the honey, even though it won’t be quite as healthy and a bit more fattening. However, don’t skip the sweetener! You need the sweetener with the berries, orange juice and Greek Yogurt to give it a sweet flavor. Let’s check out easy they are to make!
Mixed Berry Ice Pops with Greek Yogurt
Makes: 6 (4-oz ice pops)
Prep time: 15 minutes
Total time: 4-5 hours freezing time
Ingredients:
2 small containers Greek yogurt
1 cup frozen blueberries
1 cup frozen strawberries
1/2 cup orange juice
1 banana
1/4 (4 Tbs.) cup honey (divided in half)
Supplies needed:
Blender
Ice pop molds: I used 6 – 4 oz molds
Instructions:
In a blender, add the berries, banana, orange juice, 1 container of the Greek yogurt and 2 tbsp. of honey. Blendlen until smooth.
Using a small bowl, mix the remaining container of Greek yogurt and the remaining 2 tbsp. of honey.
Tip: To make putting the yogurt mixture into the ice pops easier, spoon it into a small baggie. The easiest way to do this is by placing the baggie in a glass or cup and folding it down. Spoon in mixture and then cut a corner tip off.
Pour the berry mixture into the ice pop molds filling approximately 1/3 of the way full.
Add a small layer of the yogurt and honey mixture (dividing among the 6 ice pops). Then, top with another layer of the berry mixture.
Before filling completely, I used a butter knife to gently swirl the yogurt into the fruit mixture (just enough to spread a few swirls throughout the ice pop). You could also leave in layers if desired. Finish filling the molds to the top with berry mixture.
Note: I did NOT allow head space for these. With these ingredients, there is no need.
Place in freezer for 4 to 5 hours. Run mold under hot water to loosen and release the ice pop.
