- ¼ tsp salt
- 4 Tbsp unsalted butter

- ½ cup cold brew coffee
- 1 large egg
- ¼ cup buttermilk
- 1.5 tsp vanilla extract
Whipped Cream:
- 2 cups cold heavy cream
- ½ cup powdered sugar
Raspberry Cream Cheese:
- 8 oz block of cream cheese
- ¼ cup sugar
- 2 cups raspberries
- ½ cup whipped cream
Additional Items Needed:
- 4- 5, 8 oz wine tumblers
- Chocolate shavings for topping
Chocolate and Raspberry Parfait Directions:
Preheat oven to 350 degrees F. Grease a round 9-inch cake pan.
Combine sugar, flour, cacao powder, baking soda and salt in a medium bowl.
In a separate bowl, combine melted butter, vegetable oil, coffee, egg, buttermilk and vanilla.
With a spatula, combine wet and dry ingredients. No mixer is needed.
Transfer batter to the cake pan and bake for 26 -28 minutes or until a toothpick inserted into the middle comes out clean.
Allow the cake to rest for 10 minutes, then transfer it to a cooling rack. Crumble cake into a bowl and allow to cool. (Place the crumbled cake in the refrigerator for a faster cooling time.)
While the cake is baking/cooling, make the whipped cream by adding cream into a large mixing bowl. With a hand mixer, mix on high for 1-2 minutes or until stiff peaks form. Add the sugar and continue to mix for another 30 seconds. Save ½ cup of whipped cream to add to the raspberry cream cheese layer.
Transfer the remaining cream to a piping bag and place it in the refrigerator until it is time to assemble.
Make the raspberry cream cheese layer by adding the cream cheese to a large mixing bowl. Mix on high speed for 1 minute.
Add in mashed raspberries, whipped cream and sugar. Mix to combine.
Transfer to a piping bag and place in the refrigerator until it is time to assemble.
To assemble parfaits, layer cake, raspberry cream and whipped cream until glasses are full.
