Crafting the perfect Holiday Peanut Brittle is a delightful adventure that blends the simplicity of ingredients—sugar, corn syrup, peanuts, and a dash of baking soda—with the artistry of achieving that irresistible crunch. Simmering the sugar and syrup until it reaches that golden hue, then adding peanuts and a pinch of baking soda is like conducting a symphony of flavors and textures.

Let’s dive into the delightful world of homemade Peanut Brittle, where crispy perfection meets the irresistible allure of roasted peanuts! So, gather your ingredients, channel your inner candy maker, and savor the joy of crafting this timeless and delectable easy peanut brittle that’s perfect for gifting or indulging in as a delightful snack!

Easy peanut brittle Ingredients:

Peanut Brittle

  • 2 c sugar
  • 1 c light corn syrup
  • 1 c water
  • ¼ t salt
  • 16 oz raw Spanish peanuts
  • 2 T unsalted butter
  • 2 t vanilla
  • 1 t baking soda

Peanut Brittle

Easy peanut brittle Directions:

You will need a candy thermometer like this one.

Prepare a sheet pan covered in foil and spray with a light layer of non-stick spray. Set aside.

In a 4-6 quart stock pot, combine the sugar, water, corn syrup and salt.  Use a long wooden spoon to combine.  Place a candy thermometer on the side of the pan. 

Heat over medium heat and do not stir. 

Peanut Brittle

Once the mixture reaches 234 degrees, add in the peanuts.  Stir well to combine. 

Continue to stir frequently.  The peanuts will scorch if they sit too long without moving. 

Once the mixture reaches 270 degrees, add in the butter.  Continue to stir constantly.

Once the mixture reaches 290 degrees, remove from the heat. 

Work quickly to add in the vanilla and baking soda.  Stir vigorously to combine.  

Peanut Brittle

Pour the mixture into the prepared pan.  The brittle will begin to set as it cools, so have your items ready to expedite the process.  

Once the brittle is cool, break it into pieces.

Can I customize this recipe with different nuts? Absolutely! While peanuts are traditional, feel free to experiment with other nuts like almonds, cashews, or pecans to create your unique brittle blend.

How should I store my classic Peanut Brittle? Once cooled and hardened, store your yummy homemade peanut brittle in an airtight container for up to a month at room temperature.  Separate layers with parchment paper to prevent sticking.

Should I use a candy thermometer for precise cooking? Indeed! A candy thermometer can be helpful to ensure the sugar mixture reaches the right temperature for that perfect crunch. To properly place the thermometer – clip it to the side of the pan so that it is not touching the bottom or side of the pan and the tip is in the mixture.
