Keto Avocado Deviled Eggs Recipe
Servings: makes 12 deviled eggs

Ingredients needed:
6 large eggs
2 ripe avocados
1 tablespoon lime juice
¼ tsp smoked paprika
Cilantro, finely chopped
How to make these Keto Deviled Eggs:
1. Add eggs to a medium pot, and fill halfway with water. Boil over high heat for 10 minutes, then turn off the heat, and cover for 10 minutes.
2. While the eggs are cooling, chop the cilantro, and cut the avocados in half. Use a spoon to get the avocado out of the shell, and add it to a small bowl.
3. Add the lime juice and smoked paprika to the bowl, and use a fork to mash it all together.
4. After the eggs have set for 10 minutes, rinse eggs in cold water (notes above), then peel.
5. Slice eggs in half, adding the cooked yolks to the avocado mixture. Mix together.
6. Use a pastry bag or spoon to add the avocado mixture to the egg halves.
7. Sprinkle with a pinch of paprika, and chopped cilantro.
8. Chill until ready to serve.
Notes: My trick to perfect peeling eggs is to boil them over high heat for 10 minutes, then turn the heat off, put the lid on the pot, and allow them to sit for another 10 minutes. Then take the whole pot to the sink, run under cold water, fill it, and dump it a few times. This helps to cool the eggs a bit and makes them easier to peel.
