Cookie ingredients needed:
1 box strawberry cake mix
½ cup vegetable oil
2 large eggs
Frosting ingredients needed:
4 oz cream cheese, room temperature
2 cups powdered sugar
2 cups heavy cream
Crunch Topping ingredients needed:
8 golden Oreos
3 oz strawberry jello
3 TBS melted butter
How to make these yummy Strawberry Crunch Cookies:
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
In a large bowl mix together cake mix, oil, and eggs until well incorporated.
Drop 8 large spoonfuls onto a baking sheet at least 2 inches apart.
Bake for 10-12 minutes. Once cookies come out use a small spatula to shape them into circles if they touched while baking.
To make the frosting, add cream cheese, powdered sugar, and heavy cream in a large bowl. Whip until well incorporated and thick frosting consistency.
Transfer the frosting to a gallon sized plastic bag and cut the corner off to pipe the frosting. Pipe the frosting in a zigzag motion across the cookie.
For the strawberry crunch topping add jello and golden Oreos to a baggie and crush.
Transfer crushed Oreos and jello to a bowl and add melted butter.
Mix butter into oreo and jello until well incorporated.
Sprinkle the oreo/jello mixture on the top of the cookies.
