Red Velvet Sandwich Cookies Ingredients:
- Flour 1 ⅔ cup
- Cocoa powder 1 ½ tbsp
- Corn starch 2 tsp
- Baking soda ¾ tsp
- Salt ¼ tsp
- Butter ½ cup
- Sugar 2/3 cup
- 1 large egg
- Vanilla extract 1 tsp
- Vinegar 1 tsp
- Red food liquid dye 2 tsp
Cream cheese frosting Ingredients:
- Butter ¼ cup
- Oil 2 tbsp
- Cream cheese 3 ounces
- Powdered sugar 1 cup
- Salt ¼ tsp
Red Velvet Sandwich Cookie Directions:
Preheat the oven to 350 degrees.
Add the dry ingredients: flour, starch, salt, soda and cocoa, and mix in a bowl.
Add softened butter and sugar in another bowl and mix.
Add vinegar, vanilla extract, egg and red dye to the butter and sugar mixture and mix thoroughly.
Mix the dry ingredients slowly into the wet mixture.
Form the dough into balls (use a cookie scoop so your fingers aren’t red for days) and place 2 inches apart onto a cookie sheet.
Bake the cookies for about 8 minutes.
Remove from the oven and let the cookies cool.
Frosting Directions:
To make the assembly easier, refrigerate the frosting for about an hour.
Sandwich Directions:
Now the best part, frost the bottom of one cookie and sandwich the second cookie on top.
Repeat until you have all of the sandwiches completed.

Slowly beat in the salt and powdered sugar until the desired sweetness is reached.
(If frosting seems too thick, beat in 1 tablespoon of heavy cream.)
