Fall is a time of change and transformation. The leaves on the trees start to turn colors, we break out our sweaters and boots, and we all indulge in pumpkin spice latte’s as many as humanly possible. What does this have to do with waffles? Well, I made some pumpkin spice Mickey-Shaped waffles this morning for the kids. They will make you feel like you’re sitting by a fire sipping on your favorite coffee drink.

That’s why today we’re going to make delicious and easy Mickey Pumpkin Spice Waffles! It only takes a few ingredients and 10 minutes to whip up these fluffy beauties. And don’t worry – there will be a step by step tutorial!
Pumpkin Spice Waffle Ingredients:
- 1 ½ C all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- ½ tsp salt
- 1 C pumpkin puree
- 2 large eggs
- 3 Tbsp sweet cream butter (melted)
- ¼ C dark brown sugar (packed)
- 1 C whole milk (extra ⅓ C whole milk is needed)
Waffle Directions:
Prep the Mickey Waffle maker with nonstick baking spray.
Add flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a mixing bowl. Whisk to blend all ingredients together.
Whisk to combine the pumpkin puree, eggs, sweet cream butter, brown sugar and whole milk in a medium bowl.
In the center of the combined dry ingredients form a well.
Pour the wet ingredients in the well.
Use an electric mixer set on low to combine them.
(Don’t over mix.)
The mixture will be thick. If it is too thick to pour, add an additional ⅓ cup of whole milk. Scoop the batter onto the prepared Mickey waffle iron.
Cook following the directions listed on the waffle iron.
Remove from the iron.
Serve.
(You can top the Mickey waffles with powdered sugar, fresh whipped cream with chopped pecans.)
