One of our favorite grab-and-go breakfast foods is muffins. I make a fresh batch every week to keep the boys happy. One of their favorites is Banana Bread Chocolate Chip Muffins. This is a copycat Chrissy Teigen’s Banana Bread Muffin Recipe. It’s quite a story- she needed ripe bananas to make her recipe so she called on her twitter fans. She traded a cookbook for a bunch of ripe bananas! This recipe is so moist and flavorful! The pudding mix, coconut oil and 5 bananas make these muffins addictive= you can’t eat just one!
Make muffins ahead of time and freeze them for school lunches. My son used to take a muffin in his lunch every day. Chocolate Chip Banana Muffins are one of his favorites!

Banana Bread Chocolate Chip Muffin Ingredients:
- 5 large very ripe bananas, mashed
- 4 large eggs
- 2/3 cup coconut oil
- 2 cups all-purpose flour
- 1 ½ cups sugar (plus 1 tablespoon for garnish)
- 1 3.5-oz box vanilla instant pudding mix
- 1 teaspoon baking soda
- 1 1/2 teaspoons sea salt
- 1 cup chocolate chips (plus ¼ cup for garnish)
- 1 cup white chocolate chips (plus ¼ cup for garnish)
Banana Bread Chocolate Chip Muffin Instructions:
Preheat oven to 375°. Spray standard size muffin pan with coconut oil or line with cupcake liners.
In a large mixing bowl, add the bananas, oil, and eggs. Beat with stand or hand mixer on medium speed until well incorporated.
Add in the sugar and mix on low speed until well incorporated.
Add in pudding and mix on low speed until well incorporated.
Slowly add in the dry ingredients and mix on low speed until well incorporated.
Stir in the 1 cup of chocolate and white chips.
Fill muffin tin 2/3 full. Sprinkle with 3-4 chocolate and 3-4 white chips.
Bake for 18-20 minutes or until a toothpick comes out clean. Remove from oven.
Sprinkle with sugar. Allow to cool for 15-20 minutes before removing from pan.
How to store the muffins:
From previous experience, I would only leave the muffins out a room temperature for 24 to 48 hours. We routinely freeze half of a batch of muffins in a ziploc bag. The other half we store in the refrigerator in a ziploc bag.
