Ingredients for the cake:
- 1-3/4 cups all-purpose flour
- 3/4 cup baking cocoa
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups sugar
- 4 large eggs, room temperature
- 1 cup butter, room temperature
- ½ cup mayonnaise
- 1 teaspoon vanilla bean paste
Ingredients for the Peanut Butter Fluff Filling:
- ¾ cup creamy peanut butter
- 4 ounces cream cheese, room temperature
- 1/4 cup powdered sugar
- 1 egg
- ¼ cup heavy cream
Ingredients for the Drizzle/Topping:
- ¼ cup peanut butter (optional)
- 2 tablespoons chocolate chips
- 2 tablespoons butter
- ¼ cup heavy cream
Directions for the Cake:
Preheat oven to 350°. Spray Bundt pan with cooking spray
Step 1: In a large bowl, whisk together flour, cocoa, baking soda, baking powder and salt. Set aside.
Step 2: Using a stand or hand mixer, beat the butter and sugar for 2-3 minutes, or until light and fluffy.
Steps 3: Add in the eggs, 1 at a time, beating well after each one.
Step 4: Next, add in the vanilla bean paste.
Steps 5: Reduce the mixer speed to low and add alternate adding the flour mixture and milk. Do this beginning with the flour and ending with the flour, beating just until combined. Be sure not to over mix.
Step 6: Add half of your cake batter into your prepared Bundt pan, smoothing to be sure it is evenly spread. Add in the peanut butter fluff filling. Smooth the remainder of the cake batter on top of the peanut butter fluff layer.
Step 7: Bake until 45-50 minutes or until a toothpick comes out clean. Allow pan to cool completely on a wire rack before cutting.
Directions for the Peanut Butter Fluff Filling:
Step 1: In a medium size bowl, add cream cheese and egg. Using a stand or hand mixer, beat until light and fluffy.
Step 2: Mix in the heavy cream until smooth.
Step 3: On a low speed, mix in your peanut butter until well incorporated.
Step 4: Continuing a low speed, mix in your powdered sugar about 1 tablespoon at a time, until your mixture is light and fluffy.
Directions for the Chocolate Ganache Drizzle:
Step 8: Add chocolate chips and butter to a microwave safe bowl. Heat in 30 second bursts, stirring after each, until the chocolate is melted and smooth. Slowly mix in the cream until nice and smooth. Drizzle over cake. If you like, melt the peanut butter in the microwave as you did the chocolate. Drizzle over the cake as you did the chocolate ganache. This step is optional, but it sure does add some flair and flavor 😊
