In this new land of remote learning and binge-watching, my boys and I have started watching the whole Star Wars series. It’s a whole new word when you watch them in chronological order! I thought these fun cupcakes were a great way to celebrate an amazing experience. These Princess Leia Minnie Mouse Ear Cupcakes are perfect for your Star Wars fans! Yes, they take a bit of time, but they are worth it!
Fun Facts about Princess Leia:
Princess Leia Organa was one of the greatest leaders of the Rebel Alliance, fearless on the battlefield and dedicated to ending the Empire’s tyranny. Daughter of Padmé Amidala and Anakin Skywalker, sister of Luke Skywalker, and with a soft spot for scoundrels, Leia ranked among the galaxy’s great heroes. But life under the New Republic proved difficult for her. Sidelined by a new generation of political leaders, she struck out on her own to oppose the First Order as founder of the Resistance. These setbacks in her political career were accompanied by more personal losses, which she endured with her seemingly inexhaustible will.

Ingredients needed for the Fondant Ears and Bow:
- 2 package of black fondant
- 1 Wilton fondant bow mold
- 1 mini circle fondant cutter
- 1 edible black marker
- Wilton Color spray Brown
Directions to make the Ears and Bow:
Ear Directions:
Sprinkle some powder sugar onto a cutting board
Roll out the white fondant into 1/4 inch thickness and cut out 48 circles for the ears
Bow directions:
Powder your hands with powder sugar and mold the white fondant into a ball
Pinch off 1 teaspoon size ball of fondant and press it into the larger bow size mold
Allow them to dry overnight
Chocolate Cupcakes Ingredients:
- 1 box of Triple chocolate cake mix
- 3 large eggs room temp
- 1/2 C of softened unsalted sweet cream butter
- 1 C whole milk
Cupcake Directions:
Preheat oven to 350 degrees.
Line a cupcake pan with the cupcake liners
In a medium bowl, add the cake mix, butter, milk and stir until combined.
Fill cupcake liners 3/4 of the way full with batter.
Bake the cupcakes in the oven for about 21 minutes.
Pull out the cupcakes and allow to cool before frosting.
Chocolate Frosting Ingredients:
- 3 C unsalted sweet cream butter, softened
- 6 C powdered sugar
- 1 C cocoa powder
- 5-7 tbsp. heavy whipping cream
- 2 tsp. vanilla extract
- 1 large piping bag with large star tip
Frosting Directions:
Using a stand mixer, combine the butter, powdered sugar, cocoa powder and heavy whipping cream, vanilla.
Mix on medium speed until combined and smooth.
Scoop frosting into the piping bag
Decorating Directions:
Using the black edible marker, draw out a spiral circle on the white fondant circles
Using the brown spray, spray entire fondant circle brown
Allow to dry for 1 hour
Frost the cooled cupcakes
Place a white bow in the middle of the cupcakes
Place two ears on the sides of the cupcakes
