Oven-Roasted BBQ Chicken Recipe
Ingredients:
1 whole chicken
Marinade ingredients:
1.5 tsp Kosher salt
¼ tsp ground black pepper
¼ tsp garlic powder
¼ tsp onion powder
BBQ Sauce ingredients:
1 c ketchup
½ c water
1 tbsp cider vinegar
2 tsp white vinegar
3 tbsp light brown sugar
2 tsp Worcestershire sauce
1 tsp chile powder
½ tsp ground cumin
½ tsp salt
½ tsp ground black pepper
How to make this mouth-watering Oven-Roasted BBQ Chicken:
How to make the sauce:
Combine all ingredients in a sauce pan and cook gently over medium heat, stirring occasionally.
Don’t need to bring the mixture to boil. Just warm it enough to dissolve and integrate all ingredients together.
Once everything is incorporated, remove the pan from the heat. Let the sauce cool down to room temperature.
Transfer the sauce to an air-tight container. It can be kept up to a month in refrigerator.
How to make prepare and cook the BBQ Chicken:
Pat dry the chicken with paper towel. Sprinkle marinade mixture all over the chicken, include its cavity and the back.
Transfer the chicken to a clean pan, tuck the wing tips behind the shoulders, tight the legs using cooking twine if necessary.
Cover loosely with plastic wrap and let the chicken marinade for at least 1 day (maximum 2 days) in the fridge.
When ready to cook, take the chicken out and leave it at room temperature for 15 minutes
Pre-heat oven to 450F
Put the chicken, breast side up, on a well-fitted baking pan lined with aluminum foil.
Place the chicken on the center rack of the oven and roast for 30 minutes.
Turn the oven temperature to 460F. Take the chicken out and carefully flip it over with plastic spatulas.
Return the chicken to the oven and roast for another 10 minutes.
After 10 minutes, take the chicken out and brush an even layer of BBQ sauce all over the back of the chicken. Then flip it back to breast side up.
Cook the breast side for 5 minutes then brush a layer of BBQ sauce on this side.
Return the chicken to the oven and cook for another 5 minutes.
The chicken should be done cooking at this time (the internal temperature should reach 160F).
Take the chicken out of oven, let it rest for 5 to 10 minutes, then serve.
