This yummy recipe is easy to make, satisfying, and oh so yummy! This mouth-watering dish starts with buttermilk soaked chicken breasts and then incorporates tomatoes, spices, Mozzarella cheese, and of course, Balsamic vinegar for a delicious savory dish the whole family will love!

Balsamic Glazed Chicken Breasts
4 servings
Ingredients
4 lg chicken breasts
2 c buttermilk
2 tbsp olive oil
2 tsp dried Italian spice
6 medium tomatoes
8 slices mozzarella cheese
4 lg fresh basil leaves
1 tbsp garlic minced
⅔ c balsamic vinegar
2 tbsp honey
How to make this tasty Balsamic Glazed Chicken Breasts Recipe:
1. Soak chicken breasts in buttermilk for at least 2 hours or overnight.
2. Chop tomatoes and basil, mix together and set aside.
3. Preheat oven to 350 degrees.
4. Add olive oil to iron skillet.
5. Place chicken breasts in skillet and brown on each side for approximately 5 min. each side. Remove from skillet to a cutting board.
6. Slice a pocket in each breast, about ⅔ of the way through. Brush inside and out with olive oil. Season chicken with the Italian seasoning, salt and pepper. Make sure to season the inside of the chicken breasts also.
7. Place one slice of mozzarella cheese inside each chicken breast.
8. Stick toothpicks into each breast to hold opening closed.
9. Mix balsamic vinegar, honey and garlic in a small bowl.
10. Place chicken breasts back into skillet. Pour balsamic mixture around chicken.
11. Put skillet into the preheated oven and bake 15-20 minutes until meat thermometer inserted into center of the chicken breast registers 180 degrees. Take toothpicks out and spoon liquid onto breasts. Top each breast with a slice of mozzarella cheese. Allow to bake just until cheese melts. Remove to serving platter and spoon more sauce onto each breast. Top with diced tomato/basil mixture.
