You know, sometimes I, myself, can be one of the hardest people to shop for when it comes to gifts. My family thinks they know me, and really they do, but I am one of those that will purchase something anytime I need or want it, making it hard for them to surprise me. They do know; however, that one sure-fired thing that will get me every time is food.

About Vermont Waygu
In 2008, our family brought back to life a 1790’s farm on a hillside overlooking the Connecticut River. We cleared fields, rebuilt barns and restored waterways. We became stewards of our land and pastures introducing rotational grazing and soil testing. Our goal was to farm in a holistic, sustainable fashion while producing the highest quality wagyu beef for our family, friends and consumers.
Starting with just a few wagyu embryos, we built our herd based on state-of-the-art genetic research. Each cow we raise is full-blood wagyu, descended from Japanese seed-stock and verified through DNA testing initiated at our on-Farm laboratory. We pride ourselves on our science-based approach, and through meticulous husbandry, have developed incredible wagyu genetics in order to deliver the best quality product.
Chef Michael Anthony at Gramercy Tavern discovered our wagyu from the very start and we have been blessed with this wonderful farm-chef relationship. We have grown with the Gramercy Tavern team’s support and friendship, but like Michael Anthony, we believe everyone should have access to great food.
With that in mind, our small team has worked tirelessly this winter to launch our new e-commerce platform so that we can bring our full-blood wagyu beef directly to households. We estimate that only 5,000 full-blood wagyu will be available in the U.S. markets in 2018, and we will be providing 55 of those animals directly from our farm … to your kitchen table.

I have already tasted the smoked beef kielbasa and it was full of a rich, smoky flavor and juicy goodness. The maple is going to be plated on Christmas morning as part of our breakfast feast.
