Recently I was listening to Vurbl Podcasts for some new recipes and inspiration. I thought that every little one wants a princess party at some point in their young life! If you have a Disney Princess fan, you’ll love these Princess Aurora Raspberry Jello Cupcakes with White Chocolate Raspberry Jello Buttercream Frosting. They are moist, delicious and fun! The best part- they are pink and have a gold crown!
Some facts about Princess Aurora:
- Princess Aurora (also known as Briar Rose) is the titular protagonist of Disney’s 1959 animated feature film, Sleeping Beauty. She is the daughter of King Stefan and Queen Leah. On the day of her christening, Aurora was cursed to die by the evil fairy Maleficent. Due to the efforts of three good fairies, the curse was altered to draw Aurora into a deep sleep that can only be broken by true love’s kiss.
- Aurora is the third official member of the Disney Princess line-up, and is significant for being the last to be developed during Walt Disney’s lifetime.
- Dreamy Aurora always wonders what’s possible in her heart.
Cupcake Ingredients:
- 2 cups all-purpose flour
- 1 cup white granulated sugar
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup salted butter, room temperature
- 3 egg whites, room temperature
- 1 3.9-ounce package of raspberry Jello
- 1 cup whole milk
- 1 teaspoon white vinegar
- 2 teaspoons pure vanilla extract
Frosting Ingredients:
- 2 sticks (1 cup) room temperature unsalted butter
- 1/2 cup white chocolate chips
- 4 cups confectioners’ sugar
- 3 tablespoons heavy cream
- 1 teaspoon raspberry extract
- Light pink gel food coloring
- Small white candy pearls
- Candy gold crowns (you can find them on Amazon)
Directions for Cupcakes:
Step 1: Preheat oven to 350 degrees. Line a 12-cup muffin pan with baking liners.
In a large mixing bowl, add flour, baking soda and baking powder. Sift together and set aside.
Step 2: In a small bowl, add the milk and vinegar. Mix well and set aside.
Step 3: In a separate bowl, add butter and mix on low for 1 minute or until creamy.
Step 4: Add in the sugar and mix for 30 seconds to one minute, or until light and fluffy.
Step 5: Slowly add in the egg whites and vanilla and mix for an added 30 seconds.
Step 6: Whisk Jello into the dry ingredients.
Step 7: Add milk mixture into the wet ingredients. Slowly add the wet mixture into the dry mixture.
Step 8: Mix on medium until well incorporated. Add 1-2 drops of pink food coloring if desired.
Step 9: Fill each muffin cup 2/3 of the way with batter. Bake 18-20 minutes or until it springs back when touched. Let cool.
Directions for Frosting:
Step 1: In a large mixing bowl or stand mixer, beat butter for 1-2 minutes, or until creamy. Add in the raspberry extract.
Step 2: Melt white chocolate chips in microwave safe bowl in 30 second bursts, stirring after each. Mix into the butter mixture until smooth.
Step 3: Slowly mix in the powdered sugar, 1 cup at a time, alternating 1 tablespoon of cream until creamy, light, and fluffy and it forms stiff peaks.
Step 4: Add in 1-2 drops of pink food coloring, or until desired color is achieved.
Step 5: Place in piping bag and frost cupcakes. Add the candy pearls and crown.
Step 6: Serve and enjoy!
