There is something so refreshing about lemon desserts and these scrumptious Lemon Crumb Bars are no exception! They offer just the right amount of sweetness mixed with the tartness of the lemon to make your taste buds say yum! It is a great recipe for the family and for get-togthers!

Ingredients
3 C flour
3 C old fashioned rolled oats
1 tsp kosher salt
1 tsp baking soda
1 C sugar
1 C brown sugar
1 1/2 C unsalted sweet cream butter, melted
2 tsp vanilla extract
2 – 14 oz can sweetened condensed milk
4 tbsp finely grated lemon zest
1 C fresh lemon juice
4 large egg yolks
Directions
Preheat oven to 350 degrees and line a 9×13 baking dish with parchment paper
Using a large bowl, mix to combine the flour, oats, salt, baking soda, sugar and brown sugar
In a small bowl, melt the butter
Whisk the vanilla in with the melted butter
Mix the butter in with the dry ingredients
Pour half the mixture into the baking dish and press down
Bake in the oven for 15 minutes
In a large bowl, whisk together the condensed milk, lemon zest, lemon juice and egg yolks
When the crust is done baking remove from oven and pour filling over hot crust
Top the filling with remaining crumble evenly and bake in the oven again for 25-28 more minutes
let cool completely before placing into the fridge overnight
Cut into bars and enjoy!
