Lemon Crumb Bars Recipe
- 3 C flour
- 3 C old fashioned rolled oats
- 1 tsp kosher salt
- 1 tsp baking soda
- 1 C sugar
- 1 C brown sugar
- 1½ C unsalted sweet cream butter , melted
- 2 tsp vanilla extract
- 2 - 14 oz can sweetened condensed milk
- 4 tbsp finely grated lemon zest
- 1 C fresh lemon juice
- 4 large egg yolks
- Preheat oven to 350 degrees and line a 9x13 baking dish with parchment paper
- Using a large bowl, mix to combine the flour, oats, salt, baking soda, sugar and brown sugar
- In a small bowl, melt the butter
- Whisk the vanilla in with the melted butter
- Mix the butter in with the dry ingredients
- Pour half the mixture into the baking dish and press down
- Bake in the oven for 15 minutes
- In a large bowl, whisk together the condensed milk, lemon zest, lemon juice and egg yolks
- When the crust is done baking remove from oven and pour filling over hot crust
- Top the filling with remaining crumble evenly and bake in the oven again for 25-28 more minutes
- let cool completely before placing into the fridge overnight
- Cut into bars and enjoy!
