Lemon Crumb Bars Recipe

Ingredients
  • 3 C flour
  • 3 C old fashioned rolled oats
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 C sugar
  • 1 C brown sugar
  • 1½ C unsalted sweet cream butter , melted
  • 2 tsp vanilla extract
  • 2 - 14 oz can sweetened condensed milk
  • 4 tbsp finely grated lemon zest
  • 1 C fresh lemon juice
  • 4 large egg yolks
Instructions
  1. Preheat oven to 350 degrees and line a 9x13 baking dish with parchment paper
  2. Using a large bowl, mix to combine the flour, oats, salt, baking soda, sugar and brown sugar
  3. In a small bowl, melt the butter
  4. Whisk the vanilla in with the melted butter
  5. Mix the butter in with the dry ingredients
  6. Pour half the mixture into the baking dish and press down
  7. Bake in the oven for 15 minutes
  8. In a large bowl, whisk together the condensed milk, lemon zest, lemon juice and egg yolks
  9. When the crust is done baking remove from oven and pour filling over hot crust
  10. Top the filling with remaining crumble evenly and bake in the oven again for 25-28 more minutes
  11. let cool completely before placing into the fridge overnight
  12. Cut into bars and enjoy!
