What you Need to Know about Sous Vide Recipes

Sous vide is a cooking technique in which a vacuum sealed pouch is used for cooking food items. Cooking results of this type of cooking cannot be achieved by following any other technique. All you need to do is pack food in a vacuum container and then cook it in water bath by maintaining a constant temperature.

When you about to begin with this type of cooking first thing you need to do is get a suitable vacuum sealer. In the market, there are many vacuum sealers available.

1)  Poached lobster with pasta

Ingredients required

5-7 fresh lobster tails, chili paste about 1 tablespoon, 3-4 sprigs parsley, butter (unsalted) 5-6 tablespoons, fresh garlic, salt and pasta.

For preparing sauce you need

Olive oil about 4 tablespoons, a good quantity of whipped cream, raw tomatoes along with tomato paste, vinegar about 2 tablespoons, garlic, salt and pepper according to your taste, parsley and about ½ or 1 cup of dry white wine.

Procedure to make it

To begin with, set your sous vide cooker at a temperature of 131F. Take a vacuum sealer bag and in that place chili paste, parsley, butter, and garlic. Pick lobster and add a layer of salt to it (in small quantity) and place it in the vacuum sealer along with the other ingredients. Once the water has reached to the desired level of temperature place this bag in it and cook it in hot water for around complete 1 hour. Meanwhile, you can make your sauce ready.

Take a saucepan and start heating it. Add lobster shells to the pan, wait for 3-4 minutes and then add tomato paste to it. Keep stirring it for 5-7 minutes then add wine, garlic, and vinegar to it in the right quantity. At a low temperature cook it for 5-7 minutes and then add whipped cream to it. Once it reaches to the boiling point then make its temperature low. It will take around 20 minutes to get your sauce ready. Keep stirring it and stop once it gets slightly thick.

Once your sauce is the ready place it in a clean saucepan and start boiling pasta. Remove vacuum sealer bag from water and take out only lobster from it and leave behind other herbs. Mix these lobsters and pasta with your freshly made sauce completely. The dish is ready to eat, garnish it as per your needs.

2)  Sous Vide Sirloin Steak

Ingredients required

Vegetable oil, sirloin steaks, butter (salted) about 5 tablespoons, salt and pepper according to your taste, steak seasoning about ½ cup.

Procedure to make it

Set temperature of sous vide cooker to 129F. Cover steak with salt and pepper (in small quantity). Use a vacuum sealer bag and place steak in it and then seal the bag. Place this bag in a water bath and at-least cook it for complete 1 hour. After placing the bag in a water bath, start with other part of the dish.

Take some potatoes and add them to the boiling water and leave them there for 20 minutes. Take a large bowl and place this boiled potatoes in it. Mash potatoes to a bit crunchy form and added butter to it. Also, add pepper and salt according to your taste.

After completion of one hour take out bag and remove steaks from it. Make steaks completely dry and add another coating of salt and pepper if you want to. On a preheated pan add vegetable oil and start cooking steaks from both the side. After cooking serve them along with mashed potatoes you have prepared.

3) Sous Vide Panko Crusted Chicken with Mushrooms

Ingredients required

Boneless chicken, panko bread crumbs, mushrooms around 1 pound, 2 raw eggs, vegetable oil, salt and pepper and some thyme (a small bunch will be enough).

Procedure to make it

Set temperature of Sous vide cooker to 150F. Add a coating of salt and pepper to chicken and place thymes on it. Then place both chicken and thymes in a vacuum bag and keep this bag in a water bath for complete one hour.

After keeping the bag and you can proceed with the other part of the dish. Take a pan and place it on a medium heat. In that pan add some mushrooms and cook until it turns browns and entire water gets evaporated from it.

Add some thyme sprigs with this brown mushroom and mix them well together. Add a coating of salt and pepper to these mushrooms. Keep these mushrooms at a low heat until you serve them. After completion of one hour take out the vacuum bag and remove chicken from it.

Take a pan and add some vegetable oil to it. In a container put some egg and coat chicken with the egg wash. After this take panko breadcrumbs and add a layer of salt to them. Add chicken and bread crumbs together till it covers the chicken.

When vegetable oil is hot add this chicken to it and cook it until it turns crunchy. You can then serve this chicken along with mushrooms.
