Strawberry Pancakes Topped with Whipped Cream
Pull out your mother’s favorite pancake mix and follow the box instructions. Then, chop up a few strawberries and stir them into the mix. Fry the pancakes in the skillet and serve them while they’re hot. Top them with tons of fresh strawberries and whipped cream for an amazing breakfast meal.
Macaroni and Cheese, Candied Yams and Collard Greens
Macaroni and cheese is a staple in most American households and is difficult to mess up. Make sure to cook the collard greens hours before dinner because they take a long time. Drizzle the candied yams with sugar, honey, cinnamon and other sweet spices for a lovely blend.
Chorizo Quesadillas W/ Fresh Guacamole & Lime Juice
Quesadillas are extremely easy to make and very tasty. Pull out the chorizo and cook it in the skillet with your choice of spices. Open up a tortilla shell and add cheese and the chorizo mix. Fold the tortilla wrap in half and sauté it on the skillet until it’s slightly charred. Serve with a fresh spoonful of guacamole, salsa and sour cream. Salami Sandwiches with Homemade Fries & Strawberry Daiquiris
There’s nothing like a hot sandwich. If your mother is a lover of a good sandwich, pull out a loaf of French bread and cut it in half. Add chipotle mayonnaise, spinach and sautéed mushrooms to the mix. Then, add a few slices of pepper jack and cheddar cheese. Add tomatoes and then layer fine slices of salami to the mix. Place the sandwich in the over to bake for no more than ten minutes. Cut up some potatoes into fries and fry them in hot vegetable oil over the stove. The combination of the fresh fries and the warm sandwich will be divine. Make strawberry daiquiris to take the meal over the edge!
Vegetable Fried Rice, Grilled Chicken and Salad
If your mom is a fan of Asian cuisine, consider making an amazing vegetable fried rice. First, cook the rice in a separate pot. Pour vegetable oil into the skillet and add chopped onions, peas and carrots. Throw in some chopped mushrooms. Season and sauté this blend. Add two eggs and scramble them as they blend with the vegetables. Add the cooked rice to the skillet and continue to fry this combination. Add soy sauce and a bit of brown sugar to taste. Continue to sauté until the flavors meld. Serve with grilled chicken and a fresh spinach salad on the side.
