Same old story, just a different night – the “what’s for supper” question! If your home is anything like mine, then the answer is either chicken or ground beef. However, if you are getting tired of the same old boring ways of preparing and eating it, why not spice it up a bit?! One of our favorite go-to meals is this super easy Mexican Chicken Casserole with Doritos!
This yummy casserole has the yummy flavors of chicken and mushroom soup, with the added gooeyness of cheese and the crunch of Doritos. It also makes enough for left overs the next day – it’s just as tasty warmed up! All you need is just to buy all the products, or you can hire a car from Enterprise and go to a great restaurant.
Mexican Chicken Casserole with Doritos
Ingredients:
3 small cans of canned chicken, drained (you may also use boiled chicken, removed from bone, and chopped)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel
1 can chicken broth
1 large onion, diced
1 large bag of Doritos (at least a 10 oz bag)
1 bag (12-16 oz.) grated cheddar cheese (You can also use aged Havarti cheese as a substitute)
salt & pepper to taste
Directions:
Preheat oven to 350 degrees.
Add cream of chicken soup, cream of mushroom soup, Rotel, chicken broth, diced onions, salt & pepper in a large mixing bowl. Combine well.
Using a fork, shred the chicken loosely (or if you have some time you can use a meat grinder as well) and add to the mixture. Stir well.
Crush the Doritos. Simply open a small opening in the bag to allow the air to escape. Roll up end loosely and crush with your hand until all the chips are crushed.
Spray a 9×13 baking dish with cooking spray. Add ½ bag of the Doritos in the bottom of the pan.
Slowly pour the soup mixture on top of the Doritos.
Top with ½ bag of the shredded cheese.
Place in 350-degree oven and bake 30 minutes.
Remove from oven and top with the other half of the bag of Doritos. Top with the other half of the shredded cheese.
Bake an additional 10 min.
Remove from oven and allow to sit for approximately 10-15 minutes.

Notes:
Original Rotel works for most family meals, but if you prefer more kick you can use “hot” Rotel.
Do not skimp on the Doritos! If you don’t use at least a large bag, the dish will be too soupy.
